Barszcz (Red Beet Soup) with Uszka

1 package uszka (any flavor)
3-4 medium red beets, peeled and cut in half
6 cups vegetable broth
3 bay leaves
1 large parsley sprig
3-4 whole allspice seeds
3-4 pepper corn seeds
3 garlic cloves
1 dried mushroom
1 tbs dried marjoram
2 tbs lemon juice
salt and pepper to taste.


  1. Pour vegetable broth into a large pot.
  2. Add in bay leaves, all spice seeds, dried mushrooms, parsley, peppercorn seeds and garlic.
  3. Add red beets.
  4. Cook on low heat covered for 2 hours.
  5. While soup is cooking, prepare uszka according to the package.
  6. Season to taste with salt, pepper and lemon juice.
  7. Cook for 15 minutes more.
  8. To serve, add cooked to a bowl.
  9. Pour barszcz over uzska
